Chocolate Avocado Mousse

Ingredients

Main Ingredients
  • 1/3 cup unsweetened cocoa powder Natural unsweetened cocoa gives a bold, fruity chocolate flavor.
  • 1 cup ripe avocado flesh (from about 1–2 avocados) Use very ripe avocados for the best flavor.
  • 3–5 tablespoons maple syrup or honey, to taste Powdered sugar can be used for a lighter texture.
  • 1 tablespoon vanilla extract Optional, but adds flavor.
  • 2–4 tablespoons milk of choice Dairy or non-dairy; needed for blending.
  • 1/8 teaspoon fine salt Enhances chocolate flavor.
Optional Garnishes
  • Dark chocolate shavings 70% cacao or higher.
  • A dusting of cocoa powder
  • Pinch of cinnamon

Method

Preparation
  1. Slice the avocados, remove pits, and scoop the flesh into a blender or food processor. Measure about 1 cup (150–160 g) avocado flesh for the best cocoa-to-avocado balance.
  2. Add cocoa powder and salt on top of the avocado to help incorporate the cocoa.
  3. Blend for 20–30 seconds, scrape down the sides, then blend again. If the mixture looks crumbly or too thick to move, add milk 1 tablespoon at a time.
  4. Add 3 tablespoons of maple syrup (or your chosen sweetener) and vanilla (if using). Blend until completely smooth. Taste and adjust sweetness.
  5. Spoon into ramekins. Cover and refrigerate for at least 20–30 minutes.
  6. Finish with chocolate shavings, a dusting of cocoa, or a pinch of cinnamon before serving.

Notes

Use very ripe avocado to avoid a grassy taste. Chill for at least 20 minutes to improve texture. Adjust milk gradually to achieve desired consistency.
